Rock Samphire is a true super veg being full of nutrients such as iodine, vitamin A, C and B2. Although considered to be a fine dinning food, rock samphire is common and available all year along rocky shorelines and cliffs in the UK. Easy to cook it can be used in a range of dishes from soups, salads and sauces. Rock samphire is a great plant to harvest and easy to identify with green-grey leaves and a white flower head.
Recipe - pickled samphire
Rock samphire can be pickled easily and stored for months. Pickled samphire goes really well as a side or garnish in small amounts to boost flavour, especially with egg and fish dishes.
Wash and chop about 100 grams of rock samphire.
Boil 500ml of apple cider vinegar and add cinnamon, cloves, garlic, peppercorns and a teaspoon of honey to taste.
Wait for mixture to cool before adding to a glass jar with the samphire.
Store in a dark place for 4 weeks before trying. Can be stored for a few months.
